Strawberry Mousse

Cooking Time: 20- 30 min
Setting Time; 4hours _ overnight
A great dessert to make and have when strawberries are in season. You don’t need any special Kitchen appliances to make this recipe. Just a jug blender, Also, a hand mixer comes in handy to whip up some cream Very easy recipe, Great for someone with egg or nut allergies.
Tools you will need; Jug blender. Freezer. Piping bag [if you wish to decorate with whip cream at the end] Hand mixer to whip cream.

Ingredients :-
1 cup fresh or frozen strawberries, chopped
½ cup plus 2 tbsp sugar (Grinded will dissolve easier]
1 cup water
2 cups whipping or double cream
1 tbsp. Gelatin dessert powder [ agar agar powder is a good substitute if u don’t have Gelatin]
1 tsp. vanilla essence
You will also need some chocolate curls, sprinkles or strawberries for decoration.

WHAT TO DO:
  • Place the chopped strawberries in a saucepan with the cup of water, add the half cup of sugar and bring to a simmer. Don’t turn the heat up too much, you don’t want to cook it too quickly. Let it boil until the strawberries become soft and mushy and the sugar is dissolved. Give it a taste, if needed you can add more sugar as per your taste. If the strawberries used are ripe, you will not need much.
  • Take off the heat and add the gelatin powder while whisking. Place pan in the fridge or over ice to cool slightly. This mixture should be cool but do not allow it to set.
  • Meanwhile, you can whip up the cream with 2 tbsp of sugar and the vanilla essence. Place in fridge when it reaches soft peak stage
  • Puree the cooled strawberry mixture till smooth. Add the whipped cream gradually whilst folding gently with a spatula until well combined
  • Place into individual bowls, cover and refrigerate. Allow the mousse to set, preferably overnight.
Now all that’s left is the decor! You can pipe some whip cream on top, chocolate shavings go very well with this mousse.  Or, you can use the ever-popular sprinkles!
And Remember it is all about Taste =) Mouth watering!

Butter Milk Pan Cakes:

What better breakfast then these soft, buttery, thick pancakes. Dripping with jam, butter and syrup?

Ingredients:

1 cup all-purpose flour
2 tablespoons granulated sugar
1, teaspoons of Baking powder
An egg
2 tablespoon melted butter (must be unsalted)
1 cup of buttermilk (room temperature)

What to do:

  • Mix all the dry ingredients [ flour, sugar, baking powder] In a bowl, whisk egg with buttermilk and butter till smooth .
  • Combine the dry ingredients with egg batter and whisk. Set it aside for at least five minutes for rising.
  • Heat a nonstick pan and grease well with some butter Add a scoop of pancake batter into the pan. Don’t flip it over unless some bubbles start to rise on the top. Flip and cook till golden.
  • Spread butter on hot cakes, Serve with maple syrup and  strawberry jam.
